How to deal with the cleaning of an industrial or professional kitchen?

Professional or industrial kitchens are truly important places and capture the attention precisely for the management of cleaning and sanitation of the environment. Several factors affect the quality of the restaurant or canteen but the fundamental ones and not to be underestimated, are precisely these just showed:

To do your job in the best possible way and to create a trust in customers, you don’t have to bet everything and only on the goodness of the product you offer.

We can undoubtedly say that a high dose of cleaning is required to affect not only the excellent quality of the work to be done but also food safety.

In addition to being a good practice, it is also, and above all, mandatory to sanitize the industrial kitchen and the entire workplace and to instruct the employees themselves so that they can comply with the hygiene rules as shown by the legislation.

What are the fundamental activities for having a clean industrial kitchen?

Here are some of them:

  • Always have the kitchen tidy. Placing the tools of the trade-in their place makes it easier for those who carry out activities in the kitchen (both main and secondary);
  • Avoid bacteria. It seems trivial but nothing is dirtier than a poorly maintained industrial kitchen. This is why it is important to have a sterile kitchen that can minimize contamination between foods;
  • Eliminate traces of detergents . Cleaning is essential, but it is equally important to eliminate traces of harmful substances from kitchen surfaces. Detergents, as we know, are made up of chemicals that should be thoroughly eliminated before starting to cook.

 

FOLLOW THE RULES

It is very important to follow the rules of HACCP or the analysis of hazards and critical control points; it is a set of procedures dedicated to preventing possible contamination of food. This system has American origins, was born in the 60s in the United States and was introduced in Italy in the 90s.

These rules require compliance with fundamental points aimed at preventing food from causing damage to the consumer’s health.

Therefore it will be the responsibility of the owner of the company:

  • Identify the dangers and analyze their nature;
  • Identify critical control points : a procedure aimed at eliminating or reducing a hazard;
  • Determine the critical limits;
  • Define the monitoring procedures;
  • Set and plan corrective actions: implement actions  in case of criticality;
  • Determine the verification procedures : it possible to prove that HACCP is effective;
  • Define the registration procedures: this is the adequate documentation to certify the application of the mandatory measures.

 

SOME OF OUR TIPS FOR HAVING A CLEAN PROFESSIONAL KITCHEN

To have a clean workplace, and in particular a sanitized industrial kitchen , it will be necessary to live in an easy and tidy place in which to work with the awareness that nothing can contaminate the food used for preparing the dishes. In this way, it will be possible to clean even the most complex and less accessible areas.

Another fundamental point is the cleaning of the extractor hood. We know how easy it is to dirty a hood in the kitchens we have at home. Let alone how much steam can come out of an industrial kitchen and how dirty it can be.  Even reaching flues and joint channels. Grease removing products and non-abrasive cloths will be able to effectively cleanse and remove. Thanks to the use of neutral detergents, the most difficult residues.

We also recommend cleaning the shelves where pots and other dishes needed for cooking are stored. Think cold rooms or other furniture used to hold large quantities of food; they need scheduled cleaning.

In addition to furniture, gas, hoods and ovens, be careful not to neglect the walls and glass of professional kitchens. A good wash will also remove the grease and dirt that has formed from these surfaces .
